Ölschläger is the historic Styrian job title for the worker at the wooden press (Ölkuh).

In Styrian pumpkin seed oil making, pressing was done by striking a wooden wedge. That work was called "beating out the oil" (Öl ausschlagen). Official descriptions of traditional foods therefore use the occupation name Ölschläger. It is not the name for someone who fills finished oil from a modern press into containers. Hydraulic ram presses later replaced this manual work.
