Preparation

  1. Heat just a drop of pumpkin seed oil and sweat the crushed garlic in it.
  2. Pour in the chicken stock.
  3. Reduce considerably before thickening it with the cream and crème fraîche. Stir in 1-2 generous pinches of cornflour. Finally add 2 tablespoons pumpkin seed oil.
  4. Mix with a little gravy and serve with a saddle of lamb, rare fillet steak or lamb cutlets.
